Pineapple Peach Jam
6 c. crushed peaches (fresh peaches, peeled and blended in blender)
4 c. sugar
1 (14 oz) can crushed pineapples
2 (3 oz) boxes orange jello
*Boil peaches until skin will peel off easily. Peel off skin, cut and blend peaches in blender.
*Boil peaches & sugar for 5 min. Add pineapple. Boil 2 min. Take off stove & add jello. Put in jars & seal.
*Process in boiling water canner for 10 min.
*feet: increase processing time by:
1001-3000 5 min.
3001-6000 10 min.
6001-8000 15 min.
8001-10,000 20 min.

Candied Chicken
1 1/2 - 2 lbs boneless, skinless chicken breasts
1 1/2 c. brown sugar
1/4 c. mustard
1/2 c. ketchup
1 tsp. Worcestershire sauce
1/4 c. chopped onion
1/2 tsp. salt
3/4 c. water
*Sauce is good doubled.
*Cut chicken into 1" pieces. Flour and brown chicken on outsides. Pour chicken & sauce in baking dish & bake at 350 degrees for 1 hour.
*Good served over rice.

3 cloves garlic, minced

1 tsp. sugar
1/2 c. melted shortening or butter
1/2 c. sugar
2 tsp. salt
3 whole eggs
4 1/2 c. flour
*In large bowl, dissolve yeast in warm water with 1 tsp. sugar. Add shortening, sugar, salt & eggs and mix well with a whisk. Whisk in the flour, 1 cup at a time until all the flour is added and mixture appears blended. No need to knead. Leave the dough in the bowl and cover with plastic wrap and let sit in the fridge overnight or at least 8 hours. Roll dough into desired shape, place on greased sheet, let rise and bake in preheated 400 degree oven until golden.
VARIATIONS
Orange Rolls:
*After dough has chilled overnight, divide into thirds and roll each piece into a circle. Make a mixture of one orange rind (grated), 1/2 cup sugar and 6 Tbsp. melted butter. Spread 1/3 of orange mixture over each circle and then cut the circle into 8 or 12 pie-shaped wedges. Start at wide end and roll to point. Set on baking sheet with points on the underside and curving edges to create crescent shape. Bake in 400 degree oven until golden.
Cheese Rolls:
*Prepare as if making the orange rolls, but instead of spreading the mixture with the orange filling, spread with softened butter and then sprinkle generously with your favorite cheese.

*Add 3/4 c. leftover mashed potatoes to the liquid ingredients. Vary this recipe by substituting part of the flour with whole wheat flour or cornmeal or oatmeal. Honey han be used in place of the sugar. Add lemon or orange rind directly to the dough. Add currants or nuts of any kinds. Add caraway seed, dill, dry onion flakes, any number of herbs and spices.
*Use other shapes like four leaf clovers, fan tans, Parker house, pan biscuits and knots.

Hawaiian Pineapple Cake
1 yellow cake mix
8 oz. cream cheese, softened
1 large vanilla instant pudding
milk needed for pudding
1 (16 oz) can pineapple chunks, drained
12 oz. whipped topping
1/3 c. coconut
*Mix & bake yellow cake in 9x13" pan according to box directions & cool. Make pudding according to box directions & set aside. Mix softened cream cheese with prepared pudding until mixture is smooth. Pour mixture onto cooled cake. Sprinkle pineapple chunks on top of cream cheese pudding in cake pan. Smooth whipped topping over top of cake. Sprinkle top with coconut. Refrigerate.

*In large bowl cream together 1st set of ingredients. Then add remaining ingredients. You can substitute all kinds of ingredients, raisins, dates, craisins, etc. The only thing you can't omit is the oatmeal.
*Spread on a large, lightly greased cookie-sheet and press evenly throughout (no high point in the center or the edges will be dark).
*Bake at 350 degrees for 15 min. or until mixture is baked but not overcooked. You don't want the edges to get brown. Remove from the oven, let sit a bit, but cut while still warm.

1/2 c. vinegar
4 Tbsp. ketchup
1 Tbsp soy sauce
1/4 c. (or more) chicken stock

*Sprinkle chicken with garlic salt. Dip each piece in cornstarch & then beaten egg. Fry until brown. Place in 9x13" pan.
*Mix all other ingredients together in large saucepan. Heat until sugar is dissolved and pour over chicken. Bake at 350 degrees for 1 hour.

*With oiled hands, evenly press dough into a greased 9x13" pan. Make indentations in the dough with your knuckles.
*Cover and let rise in a warm place for 20 min. or until double in size. While dough is rising, select and prepare toppings.
*Spread or sprinkle toppings evenly over dough.
*Bake at 400 degrees for 20 min. or until done. Let cool and slice in half and then diagonally.
*Garlic-Cheese Topping

Chicken Cordon Bleu
4 boneless, skinless chicken breast halves (about 1 pound)
4 tsp. honey mustard
4 thin slices turkey ham
4 slices low fat Swiss cheese
1/3 c. Egg Beaters (or 2 eggs)
1/2 c. seasoned dry bread crumbs
*Pound each chicken to flatten slightly. Spread each chicken with 1 tsp. mustard, top with slice of turkey ham and Swiss cheese. Roll up each chicken to encase filling. Secure with toothpicks.
*Dip chicken rolls in egg, roll in bread crumbs to coat. Place in lightly greased baking pan. Bake at 350 degrees for 25 min. Cover loosely with foil and bake 15-20 min. more until chicken is done. Good dipped in mustard mixed with mayonnaise.

2/3 c. cornmeal
2 tsp. baking powder
1/4 tsp. baking soda
1/2 tsp. salt
*Mix flour and buttermilk together and let stand at least 3 hours (up to 24 hours). Add and mix the rest of the ingredients. Bake for 25 min. Great with honey butter or maple syrup.

*Line 8" square baking pan with foil. Combine sugar, evaporated milk, butter and salt in medium saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4-5 min. Remove from heat.
*Stir in marshmallows, chocolate chips, nuts and vanilla. Pour into baking pan, refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces.
