1/2 c. onions, chopped
1/4 c. celery, chopped
1 Tbsp. butter
2/3 c. ketchup
1/2 c. water
2 lbs. lean ground beef
2 Tbsp. lemon juice
1 Tbsp. brown sugar
1 1/2 tsp. Worcestershire sauce
1 1/2 tsp. salt
1 tsp. vinegar
1/4 tsp. dry mustard
*Saute onion & celery in butter. Add 2 lbs. ground beef. Brown lightly. Drain off excess fat. Add rest of ingredients. Simmer, covered for 30 min.

Aunt Joan's Taco Casserole
Natcho cheese chips
1 lb lean ground beef (or chicken w/cream of chicken)
1 med. onion
garlic salt
taco seasoning
1 can cream of mushroom
1/2 can water
1 can corn, drained
1 small can of green chilies, diced
1 can chopped olives
extra sharp cheddar cheese, grated
*Line a big pan with Natcho cheese chips. Brown meat with med. onion chopped fine. Add garlic salt & other ingredients. Add everything to the shell pan. Top with grated cheese. Bake at 325 degrees for 20 min.

1 package (6-8 oz) Spanish rice & vermicelli mix
1 lb lean ground beef
2 cans (10 oz ea.) Enchilada sauce, divided
10 large corn tortillas, warmed
4 c. shredded cheddar cheese, divided
*Prepare rice mix according to package directions. Meanwhile, in a large skillet, cook beef over med. heat until no longer pink; drain. Stir in Spanish rice & 1 1/4 c. Enchilada sauce. Spoon about 2/3 c. beef mixture down the center of each tortilla. Top each with 1/3 c. cheese. Roll up.
*Place in a 13x9x2" pan. Top with remaining Enchilada sauce and cheese. Bake uncovered at 350 degrees for 8-10 min. or until cheese is melted.

2-3 cloves garlic, crushed
1 onion, chopped
1 lb lean ground hamburger (opt.)
2-3 cans stewed tomatoes
2-3 small cans tomato sauce
1/2 green pepper, chopped
1/2 carrot, grated
1 tsp. oregano
1 tsp. basil
1/2 tsp. thyme
1/2 tsp. garlic powder
*Saute onions/garlic then brown hamburger. Add all other ingredients. Simmer 30 min. - 1 hour. Add about 1 tsp. salt (to taste).
*Serve over noodles or use as lasagna sauce. The longer you simmer the more enhanced the flavors become. May add more spices if not enough for your taste.

Laurie's Lasagna

diced or dehydrated onion
dehydrated chopped garlic
Italian seasoning
tomato sauce
diced tomatoes
lasagna noodles
cream cheese (mixed with some milk and dried parsley)
mozzarella cheese, shredded
*Brown beef. Season with salt and pepper, onion, garlic and Italian seasoning. Add tomato sauce and diced tomatoes to desired consistency. Cook on med-low for about 30 min. Separately, cook noodles.
*Layer Ingredients in this order:
1. sauce
2. noodles
3. cream cheese
4. sauce
5. noodles
6. mozzarella cheese
7. sauce
8. noodles
9. mozzarella cheese
*Bake at 350 degrees for about 1 1/2 hours.

1/4 c. finely chopped onion (or onion flakes)
2 Tbsp. parsley
1 tsp. salt
1/2 tsp. ground sage
1/8 tsp. pepper
1 1/2 lbs. lean ground beef
1/4 c. ketchup
2 Tbsp. brown sugar
1 tsp. dry mustard
*Mix all ingredients, except hamburger, well then mix in hamburger. Pat into baking dish and bake uncovered at 350 degrees for about 1 1/4 hours. (Recipe is good doubled and baked in a 9x13x2" pan. Can also be spread into muffin pans for individual meatloaves.)
