3 c. flour
1 tsp. salt
1 tsp. baking soda
1 tsp. baking powder
3 tsp. cinnamon
3 eggs
1 c. vegetable oil
2 1/4 c. sugar
3 tsp. vanilla
2 c. grated zucchini
1 c. chopped walnuts (optional)
*Grease & flour two 8x4 pans.Preheat 325 degrees (or use muffin cups)
*Sift flour, salt, baking powder, soda & cinnamon
*Separate bowl: mix eggs, oil, vanilla & sugar. Add dry ingredients. Stir in zucchini & nuts.
*Pour into prepared pans.
*Bake 40-60 min. (for muffins bake 20-25 min - sprinkle with nuts, cinnamon & sugar)

Cowboy Caviar
2 pkg Italian Dressing (already made...or buy pre-made)
2 cans black beans, drained & rinsed
2 cans black eye peas, drained & rinsed
2 cans corn
2 green peppers, diced
1 can diced tomatoes
2 bunches green onions, diced
1 avacado, diced
*mix together and chill, serve with tortilla chips

Chicken Tortilla Soup
2 chicken breasts
1 Tbsp. olive oil
1 1/2 tsp. cumin
1 tsp. chili powder
1/2 tsp. garlic powder
1/2 tsp. salt
1 c. diced onion
1/4 c. green bell pepper
1/4 c. red bell pepper
3 cloves garlic, minced
1 can (10 oz) Rotel Tomatoes & green chilies
32 oz. chicken stock
3 Tbsp. tomato paste
2 c. hot water
2 cans black beans
3 Tbsp. cornmeal
5 corn tortillas cut into strips
*cook in crock pot on low 6-8 hours.
*garnish: sour cream, avacado, cheese, cilantro
