- Preheat oven to 350 degrees F (175 degrees C), and grease a 9x13 inch baking dish.
- Stir together the cornmeal, flour, sugar, baking powder, and salt in a mixing bowl. Pour in the vegetable oil, melted butter, honey, beaten eggs, and milk, and stir just to moisten.
- Pour the batter into the prepared baking dish and bake in the preheated oven for 45 minutes, until the top of the cornbread starts to brown and show cracks.

Death by Chocolate Zucchini Bread
INGREDIENTS
- 1/2 c. melted butter, plus more for brushing pan
- 1/2 c. cocoa powder, plus more for dusting pan
- 1 1/4 c. all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 1/4 tsp. kosher salt
- 1 c. sugar
- 1 egg plus 1 egg yolk
- 1 tsp. vanilla extract
- 2 c. grated zucchini (from 1 large or 2-3 small)
- 2/3 c. chocolate chips
- Flaky sea salt, for garnish
DIRECTIONS
- Preheat oven to 350 degrees F. Butter and dust a loaf pan with cocoa powder.
- In large bowl, whisk together flour, cocoa powder, baking soda, cinnamon, and salt.
- In another large bowl, stir together sugar and egg and egg yolk until smooth, 1 minute. Add melted butter and vanilla extract and mix until smooth. Add zucchini, then add flour mixture in 3 additions. Fold in chocolate chips.
- Transfer batter to prepared dish and bake 50 minutes.
- Let cool slightly in pan, then transfer to a cooling rack. Sprinkle with flaky sea salt and serve.

Jen Dewsnup's Whole Wheat Bread
3 c. warm water
1/3 c. sugar or honey
2 tsp. salt
1/3 c. oil
2 Tbsp. yeast
1st flour 3 c.
2nd flour 3-5 c.
*Start with the warm water (bath water temp) and add the yeast. Then add all the other ingredients except the 2nd flour. Mix for about 30 sec. then add the 2nd flour 1/2 c. at a time until the dough forms a ball on the hook and stops sticking to the bowl.
*Continue to mix for about 5 more minutes to knead. Dump dough onto oiled counter and split up for the loaves. Form the loaves and put in oiled pans and cover to rise. Let double and bake at 350 for about 25-30 min. for large loaves 20-25 min. for med. size and 15-20 min. for small loaves or until nice and golden brown on top.
*Makes 2 large loaves or 3 medium loaves or 5 small loaves.

1 c. milk
6 Tbsp. butter
2 1/2 tsp. yeast
2 eggs
1/3 c. sugar
3 1/2 c. flour
1 tsp. salt
1/3 c. sugar

*egg & milk mixed together for brushing
*softened butter for smearing and greasing
*Melt butter with milk until very warm (not boiled). Allow to cool to warm. Sprinkle yeast over top & stir gently. Allow to sit for 90 min.
*Combine flour & salt.
*Mix sugar, eggs -- pour in milk/butter/yeast & stir.
*Add flour -- dough cycle on bread machine.
*Roll dough no wider than loaf pan. Smear with 2 Tbsp. melted butter. Sprinkle with sugar and cinnamon. Start at far end & roll towards you. Pinch to seal.
*Smear loaf pan with butter. Dough in pan rise 2 hours. Bake 350 degrees. Mix egg & milk for top.
*Bake 40 min.

Doughty Dinner Rolls (and variations)
2 packages yeast
1 1/4 c. lukewarm water
1 tsp. sugar
1/2 c. melted shortening or butter
1/2 c. sugar
2 tsp. salt
3 whole eggs
4 1/2 c. flour
*In large bowl, dissolve yeast in warm water with 1 tsp. sugar. Add shortening, sugar, salt & eggs and mix well with a whisk. Whisk in the flour, 1 cup at a time until all the flour is added and mixture appears blended. No need to knead. Leave the dough in the bowl and cover with plastic wrap and let sit in the fridge overnight or at least 8 hours. Roll dough into desired shape, place on greased sheet, let rise and bake in preheated 400 degree oven until golden.
VARIATIONS
Orange Rolls:
*After dough has chilled overnight, divide into thirds and roll each piece into a circle. Make a mixture of one orange rind (grated), 1/2 cup sugar and 6 Tbsp. melted butter. Spread 1/3 of orange mixture over each circle and then cut the circle into 8 or 12 pie-shaped wedges. Start at wide end and roll to point. Set on baking sheet with points on the underside and curving edges to create crescent shape. Bake in 400 degree oven until golden.
Cheese Rolls:
*Prepare as if making the orange rolls, but instead of spreading the mixture with the orange filling, spread with softened butter and then sprinkle generously with your favorite cheese.
Potato Rolls:
*Add 3/4 c. leftover mashed potatoes to the liquid ingredients. Vary this recipe by substituting part of the flour with whole wheat flour or cornmeal or oatmeal. Honey han be used in place of the sugar. Add lemon or orange rind directly to the dough. Add currants or nuts of any kinds. Add caraway seed, dill, dry onion flakes, any number of herbs and spices.
*Use other shapes like four leaf clovers, fan tans, Parker house, pan biscuits and knots.

2 oz. baking unsweetened chocolate, melted (or 6 Tbsp. dry cocoa & 2 Tbsp butter)

*Preheat oven to 350 degrees. Grease and flour loaf pans.

1 c. choc. chips (opt.)

*Mix all together and pour into loaf pan. Bake at 350 degrees for 40 min.
*For Hawaiian bread don't use chocolate chips. Instead, add 1 mix dry vanilla pudding & 1 can drained pineapples that you've blended in a blender. Add extra flour to make the dough thick like it was before you added the pineapples.

1 Tbsp. baking soda
1 tsp. salt
2 large eggs
1 3/4 c. milk
2/3 c. vegetable oil

1 1/2 chopped walnuts
*Preheat oven 350 degrees. Grease 2 large loaf pans. Combine flour, sugar, baking powder, baking soda & salt in a large bowl.
*Combine eggs, milk & vegetable oil in med. bowl. Add to flour mixture; mix just until moistened. Stir in 1 1/2 c. choc. chips & nuts. Spoon into prepared loaf pans.
*Bake for 50-55 min. or until wooden pick inserted comes out clean. Cool 10 min. & remove from pans.
*Microwave remaining choc. chips in heavy-duty plastic bag for 45 sec. intervals, kneading until smooth. Cut small hole in corner of bag; squeeze to drizzle over bread. Sprinkle with additional nuts.

*Cover and let rise in a warm place for 20 min. or until double in size. While dough is rising, select and prepare toppings.
*Spread or sprinkle toppings evenly over dough.
*Bake at 400 degrees for 20 min. or until done. Let cool and slice in half and then diagonally.
*Garlic-Cheese Topping

1 1/2 oregano leaves dried
2 cloves garlic chopped and sauteed until tender
1/4 c. Parmesan cheese, grated
1/4 tsp. salt
*Greek Style Topping
1/4 c. olive oil
1 tsp. dried parsley
1/2 tsp. dried oregano
3/4 c. thinly sliced onion cooked until tender
1/3 c. feta cheese
1/4 c. kalmata or black olives
1/3 c. olive oil
2 tsp. sugar
1 tsp. salt
3 c. flour
